Change of plans…

 

So last night’s dinner was supposed to be baked Tofu and Spaghetti Squash Mac and Cheese…but there was a slight change of plans. At the last minute I was asked to dog-sit for the evening for my friend Kelly. Our dogs are just beginning a very tentative friendship, so I really wanted to keep an eye on them. Ok, maybe not the Hounds of Hell. They are stinkin’ cute though, aren’t they? However, I did want to leave the two of them alone and up to mischief while I focused and worked in the kitchen for an hour. Trust me, they look cute, but they are plenty sneaky and crafty.

I had leftover Polenta Muffins and a Sweet Potato. It was delicious, and even the dogs thought so. They both had a little bite of sweet potato.

We had a nice relaxed evening and played outside for a bit. Both of them were very well behaved, but it made me think about how difficult healthy cooking and eating could be for people with kids! After last night, I couldn’t imagine. MAJOR KUDOS to you healthy-living parents! :)

That’s the nice thing about leaving my Friday nights free for leftovers or what have you; If I have to skip a night of my meal plan, I just shift things back a day! So, tomorrow will be Baked Tofu and Spaghetti Squash Mac & Cheese, Thursday will be Eggplant Parmesan and Friday will be Caribbean Jerk Chickpea Burgers!

I know this post wasn’t much of anything except, “look how cute the dogs in my life are!” but hey, they are pretty darn cute and who couldn’t use a little cuteness from time to time?

In other news…I think I might try going for a run tomorrow. Tomorrow makes 4 weeks. My knee is better. It hurts only occasionally. Just a short, slow run. We’ll see. Yoga after work tonight and then tomorrow is my favorite day of the week! Thursday! My day off! :)

Do you have any pets? If so, how many? I think we’re going to stay a 1 dog family for awhile. Although Lilly Beans is welcome over anytime!

Tonyne’s Fancy Eggplant Cutlets

 

Just a recipe and a video for today folks, hope that’s ok!

Tonyne’s Fancy Eggplant Cutlets (5 points per 2 slices)

1 medium raw eggplant, cut into 1/2 inch cutlets  
1/2 cup Progresso Panko crispy bread crumbs - plain, with Italian seasoning sprinkled in 
1/4 cup fat-free egg white substitute  
1/4 cup tomatoes, chopped  
1/4 cup red onion
1 marinated artichoke heart, chopped
6 large olives, finely chopped, green & kalamata mixture
4 Tbsp fat-free ricotta cheese  
1/4 cup Kraft Reduced fat Italian style shredded cheese blend 

 

Instructions

Bread eggplant slices using egg substitute and panko, cook in a 400* degree oven for 11 minutes per side.
Remove from oven when golden brown. Top each cutlet with 1tbsp of ricotta cheese and 1/4 of tomato & olive mixture. Top with 1 tbsp of Italian cheese blend and place under broiler until cheese melts.

Easy as pie and looks like a fancy dish! If you are going to have leftovers, dress the eggplant right before eating after reheating the cutlets in a toaster oven. I paired it with a serving of Roni’s Chilled Orzo and Pea Salad. It would make an excellent Meatless Monday dinner as well!

Eventful Saturday!

 

First off, I did GREAT at the movies last night! I snuck in two 100 Calorie bags of popcorn (one for me, one for Kelly) and a bottle of Diet Peach Snapple. Kelly snuck in some “fun size” (aka – evil size) chocolate candy!

I almost got busted at the concession stand when my dear friend Kelly, who forgot her drink and had to buy one, badgered me in front of the guy at the register about why I wasn't buying a drink. I had to give her the "giant eyeball are you serious stare-down" before she realized what she was doing. I ate my bag of popcorn and 1 evil size Snickers bar. My snacks were better than the movie “Dear John” I’m afraid. I just was not impressed at all. We rented “Whip It” to try and redeem the evening and it did! That movie was fantastic!

This morning I took Chaser to the Vet. He’s such a happy dog, no matter where he is!

However, after his appointment he was not too happy. I got home with him and he began panting heavily and broke out in terrible hives. Having been a Vet Tech for a few years I recognized the signs, he was having a vaccine reaction and took him right back to the Vet. They gave him some IV Meds and stopped the reaction. I’m very happy to say that he is doing much better but tonight he is a very tired pup!

After our eventful morning, The Husband and I headed out to get groceries and supplies for the Super Bowl party at the bar tomorrow. While I was out, I picked up this!

001I’m sad to report that it appears my Wii Fit has been correct on my weight, only off by about a pound.  However, I am happy to have this new scale and have set up a weighing area in my laundry room along with a graph to track all the body analysis this crazy scale does! Remember, there’s a $5 off coupon at Coupons.com for WW Conair scales! I ended up paying $24 for this after the coupon.

 

Once home, I was famished, the yogurt I had eaten at 10am was gone. So I whipped up a quick Tuna Salad and ate it on tostadas with some spinach. YUM!002

My Tuna Salad is simple!

1 package of tuna

2 Tbsp Miracle Whip

1 Tbsp Dill Pickle Cubes

1-2 squirts of lemon juice

Salt, pepper, garlic & onion powder and paprika to taste.

The whole shebang, with 2 Mission Corn Tortillas (baked until crisp to make a “tostada”) ended up only being 7 points.

So, it’s been a very eventful day here! I’m relaxing with a beer watching Iron Chef with the husband. We plan to watch some movies tonight and rest up for tomorrow.
